Joy's No-Fuss Recipes

Easy-Peasy Fudge

I have a super easy fudge recipe. Every ingredient you need is featured below.  When I first made this recipe (in the early 1980's), everyone thought it was wonderful and asked for the recipe. I pretended it was an old, secret family recipe and I refused to share. Well, that was nonsense. I had found the recipe in a magazine and I just wanted people to think I was an awesome cook.
Time to share.

'FOOLPROOF DARK CHOCOLATE FUDGE'
(Makes about 2 pounds)

3 (6-ounce) packages of semi-sweet chocolate chips
1 (14-ounce) can sweetened condensed milk (NOT evaporated milk)
Dash of salt (don't forget!)
1/2 to 1 Cup of chopped nuts (I used walnuts)
1 &1/2 teaspoons vanilla extract

In a large micro-wave proof bowl, nuke chips, sweetened condensed milk, and salt for 1 minute, full power. (I used a glass mixing bowl).

Remove from microwave, stir in nuts and vanilla, and nuke 1 more minute. Remove from micro-wave and stir well.

Immediately spread evenly into 8 or 9" square lined pan. I lined mine with parchment paper and it was an excellent choice.
Chill 2 hours until firm (the fudge, not you).

I just lifted the paper and the fudge out of the pan, onto a cutting board, and cut what I needed. Then, I dropped the whole she-bang back into the pan, and slammed it back in the fridge.

This is powerful stuff, kids. Don't handle without adult supervision.

I'm making up goodie boxes with my fudge and Handyman's homemade peanut brittle.
